Honey is a reflection of what the bees have visited. In mountain valleys the flowering season is short and varied, and the honey that results changes from one valley, and one year, to the next.
Season and place
Because the flowers differ, colour, aroma and texture differ too. A honey gathered early in the summer can taste lighter than one gathered late. That variation is normal, and it is one reason we describe honey by harvest rather than promising a single, unchanging flavour.
How to enjoy it
- On warm bread or flatbread with butter.
- Stirred into tea once it has cooled slightly.
- Drizzled over yoghurt, porridge or fruit.
A note on crystallisation
Many honeys thicken or crystallise over time. This is a natural process, not a fault. Standing the closed jar in a bowl of warm water will soften it again.
